Standardization

Below you will find a detailed description of the stages of production, processing and standardization of honey.

As soon as we have collected the honey, it is stored in containers that hold 27 kg each. According to the variety, the honey crystallizes after five to eight months.
It is put in a heat chamber for 24 hours, where it regains its fluid condition. The temperature is low and thus, the honey retains all its characteristics.

The honey is emptied into containers. It is the last time that a person interferes; for a better result, the standardization is continued in automated manner.

Stirring Tank

With a pump, the honey is transferred into the stirring tank, where it is further fluidified. The stirring is done by machines and can take one or two days.

Filter-Pump

During the process of standardization, the honey is moved solely with the help of a pump, which is certified for food and supports hygiene. The filter is an important part of the process in order to achieve the best possible result, as it holds back all foreign particles. At the same time, it lets the pollen pass; it is them that give every honey variety its distinct name.

Tranquillity-Container

Through the filter, the honey gets to the so-called tranquility-container, where it “rests” for two-three days at a low, controlled temperature. It gains mass and texture and develops its aromas. In this phase of rest, the honey discharges any foreign particle that may have passed the filter, and brings it to the surface. It is a self-cleaning phase.

Bottling Station

Now it is time to fill the magic of Crete in jars. In the bottling station, we can fill jars from 50 – 950 g with absolute precision. There is no possibility to standardize a huge amount per hour, but we put a special emphasis on complying with the highest standards.

Inject Band

After standardization, the jars roll over a band, where the date of standardization is digitally printed on the lids. According to the law, the honey may be consumed within two years from that date.
